Vegetable Fajitas

Ingredients

  • 1kg Quorn pieces           
  • 750g Mixed peppers
  • 250g Mushrooms
  • 250g Red onions
  • 15ml Olive oil
  • 3g Garlic puree
  • 1kg Canned tomatoes
  • 50g Sugar
  • 8g Chilli powder
  • 10g Dried basil
  • 8g Oregano
  • 560g (20) Tortillas (wheat flour)

Method

1. Place quorn pieces, thinly sliced peppers, vegetables on to a tray and drizzle with garlic oil (olive oil & garlic puree mixed). 

2. Roast in a hot oven until cooked (approx 15 mins).

3. Sweat off onions, add chilli, canned tomatoes, sugar and herbs; mix through peppers and vegetables.

4. Divide between wraps.

 

Tips and Variations

  • Why not experiment with other vegetables according to the seasons?
  • This mixture would work well as a topping for pasta or in a pasta bake as well.
