Root Cake

Ingredients

  • 750g self raising flour
  • 250g brown sugar
  • 250g sugar
  • 10g baking soda
  • 10g cinnamon
  • 250ml cooking oil
  • 4 eggs
  • 5g dried ginger
  • 10ml vanilla essence
  • 250g carrots
  • 250g beetroot
  • 250g sweet potato
  • 250g apples
  • 250g raisins

Method

  1. Coarsely grate the carrot, beetroot and sweet potato, mash up the apple.
  2. In a mixing bowl mix together flour, sugar, baking soda, cinnamon and salt.  In a smaller bowl, whisk together oil, eggs, ginger and vanilla.  Add the oil, mix grated vegetables and apples and dried fruit to the dry ingredients and mix on slow until combined.
  3. Bake at 325F for approximately 40 minutes or until cooked, when cooled top with butter icing.
