Homemade BBQ sauce

Makes 20 portions

 

Ingredients

  • 100ml Oil
  • 200g Onions, chopped
  • 2kg Tomatoes, chopped
  • 4tsp Garlic puree
  • 200g Brown sugar
  • 300ml Vinegar
  • 200ml Worcestershire sauce
  • 100g Tomatoe puree

Method

  1. Cook onions in oil until softened.
  2. Add rest of ingredients and bring to boil.
  3. Simmer until sauce begins to thicken.
  4. Remove from heat and puree with hand blender.

Tips and variations

Don't make the sauce more than 24 hours in advance, as this affects the strength of the vinegar in the recipe.
