Green Pea Soup

Makes 20 portions

Ingredients

  • 750g Split peas (dried)
  • 100g Carrots (fresh, diced)
  • 100g Leeks (fresh, chopped)
  • 100g Onions (fresh,chopped)
  • 50g Vegetable bouillon
  • 4l Water
  • 3g Black pepper

Method

  1.     Place the washed peas in a thick-bottomed pan and cover with water and bouillon.
  2.     Bring to the boil and skim.
  3.     Add the remaining vegetables and the pepper.
  4.     Simmer until tender.
  5.     Pass through a sieve or liquidise.
  6.     Reheat before serving.

Tips and variations

For extra green colour add some fresh or frozen peas right before liquidising, they don't take long to cook and add a burst of extra flavour and nutrition.
